The best cafes don’t just serve coffee; they create places people want to return to.
That’s exactly what the team behind Praise Joe have been doing for years, and we’re excited to see their story continue with the opening of Hayl Mary! ☀️
Built on the same warmth, the same people, and the same connection to community, Hayl Mary feels like a natural next chapter, and we’re thrilled to see a range of our core blends along for the ride.
Congratulations to the whole team. We can’t wait to see Hayl Mary blossom!

Trust us when we say: the peach aroma is SO STRONG, it'll have you salivating... and that's before you've even brewed it! 🍑 🧡
Peachy Keen is bursting with:
🇨🇴 Washed Colombia for clarity and lift
🇵🇬 PNG for body and chocolate depth
🇨🇴 Co-fermented Colombia for that soft peach sweetness and creamy finish.
Designed to be enjoyed black or milk, this beautiful blend is all about nostalgia – but just like looking back through old photos, it's hard to stop at just one. 🧡

What people say
Pablo & Rusty's Coffee Roasters is a small batch specialty coffee roaster that has been making waves in the coffee industry since its inception in 2003. Founded by Saxon Wright, the company was named after his two coffee-loving brother-in-laws and started as a cafe on Sydney's North Shore with a small off-site roastery. However, due to popular demand from cafes for wholesale supply, the roasting side of the business grew quickly and became the core focus.
Today, Pablo & Rusty's supplies numerous outlets across Australia and offers an extensive subscription program for homes and offices. The company also has two stores in Sydney CBD and Brisbane CBD which serve as their 'sand pits' to test coffees, equipment, and ideas in pursuit of the best cafe experience.
What sets Pablo & Rusty's apart is their commitment to positively impacting people and planet through coffee. They have taken their journey all over the world and now firmly focus on sustainability and stewardship to ensure that their industry has a long and bright future.
Their Training Bar and Roastery located at 3 Plassey Road, North Ryde is a must-visit for any coffee enthusiast. With opening hours from Monday to Thursday (6:30am-5pm), Friday (6:30am-8pm), and Saturday (8am-3pm), you can enjoy their delicious coffee at any time of day.
Overall, Pablo & Rusty's Coffee Roasters is a fantastic choice for anyone looking for high-quality specialty coffee that is sustainably sourced. Their commitment to excellence shines through in every cup they serve!
