Feliz Cinco de Mayo!

In Mexico, meals don’t really belong to anyone. They belong to the table. La mesa.

Food arrives to the centre. Nothing is portioned out, nothing fixed. You take what you need, when you need it, building each bite yourself.

Tortillas are always there, kept warm, because they’re not a side, they’re how you eat. They hold everything together, literally.

A lot of it sits closer to antojitos, those small, everyday foods that exist outside formal meals, eaten standing up, late at night, in markets or on the street.

Not a starter, not a main. Just something you reach for, then another.

Even carne asada isn’t just a dish. It’s a gathering. Fire going all afternoon, people arriving and leaving, plates moving, tortillas passing hands.

That’s the rhythm.

Not one plate in front of you, but everything within reach.

May's Tequila of the Month is .

Start with the Silver and you get that clean hit straight away - fresh citrus, a bit of pepper, agave coming through.

Then it rounds out as you move up. Reposado picks up a touch of vanilla and oak, smooth without losing its edge.

Añejo goes deeper again - warmer, richer, a little slower.

It’s one of those ranges where you can actually taste the progression, not just read it on a menu.

Go classic with a margarita if you want something sharp and refreshing, or take it neat and work your way through properly.

When people think of Mexican cuisine, they often think of tacos, tortillas, something coming off a grill.

But along the coast, it’s different.

Places like Sinaloa and Baja California are built around seafood. Oysters are a staple. Shucked fresh, eaten straight away, hit with lime and chilli. No heavy prep. Just cold, sharp, and gone in a couple of bites.

Raw seafood, kept cold, cut through with citrus and heat.

Simple, but very deliberate.

That’s where this comes from:

Sydney rock oysters, freshly shucked. Lime and chilli first.

Then a cold, savoury edge over the top. Tomato, citrus and salinity. A touch of chilli. Celery and green apple granita for crunch and lift. Finger lime for sharp bursts of acidity.

This follows the same approach you’ll find on the coast in Mexico. Fresh seafood. Citrus doing the work. Heat right behind it.

Eaten immediately.

Across the north, especially in places like Sonora and Nuevo León, beef is cooked directly over charcoal or open flame, often using mesquite, which gives a distinct smoky depth.

No heavy technique. Just heat, timing, and the cut in front of you.

This is carne asada. Not a single dish, more a way of eating.
Weekends built around the grill. Meat cooked in the open, often eaten with tortillas, lime and salt.

It’s direct. Nothing hidden. The quality of the meat does the work.

You see it in street stalls and backyards alike. Fire, meat, seasoning.
