Fun fact!🤓 While cheddar cheese and mozzarella melts in our hot sandwiches, the ricotta will never melt. Even put on a pan, it will not become softer, on the contrary!😁 This is because it's an acidic cheese. The calcium dissolves, which tightens the proteins together, and the cheese hardens.
