Rhubarb almond cake ๐

Recipe , inspired after seeing give it a glowing review (also my first time trying reverse creaming, beating the flour with the butter made me very uncomfortable but it turned out beautifully!)

Jammy rhubarb coffee cake ๐ด๐ก๐ฃ
Late on the train but I have had this recipe pinned since I saw it on 's substack. It definitely lived up to the hype - a soft moist crumb, a layer of tart bright rhubarb compote and a sweet salty oat crumble. The crumble is so addictive and I've already made another batch to eat with spoonfuls of leftover rhubarb compote ๐คญ
Rainy day baking always feels extra cosy, and even more so in jacaranda season when the sun peaks out from the clouds!

Tahini halva brownies ๐ซ๐ซ
These are my gold standard brownies, courtesy of the queen . It's the perfect balance between gooey and cakey, the sesame flavour mellows out the overwhelming intensity that that some brownies can have, and the top is perfectly crackly. The base recipe is so versatile and I can imagine it with chunks of nut praline or swirls of salted caramel...
I brought these to a weekend away with friends; we all met through attending and volunteering with a youth leadership program. Spending time with these weird, wonderful, kind and generous humans always reminds me of the goodness and joy in the world ๐ฅฐ Shoutout to the best team ! (Highly recommend if you're 18-30 years old ๐)

Matcha cream pudding - a continuation of my matcha blondie saga ๐ต๐ฎ
Some of you might have seen my story from last week - I forgot to set a timer, cuddled my dog and ended up falling asleep on his memory foam bed, only to wake up to a very toasty smell ๐
This was my attempt to salvage what I could and it actually turned out surprisingly well! I halved the blondies lengthwise, brushed with a matcha simple syrup then layered it with unsweetened whipped cream. The very overbaked edges were crumbled on top to finish. After sitting in the fridge overnight, the blondies were soft and the whipped cream gave it a pudding like texture. I made it in a tupperware container which might be my new favourite way to make fridge desserts for easy snacking!

Citrus bars ๐๐โ๐ฉ๐
When your mum brings home a bunch of 'lemons' from grandma's tree and it turns out some are actually limes (not just unripe lemons) and some are a strange mandarin lemon hybrid ๐
Then you go down a rabbit hole looking for a lemon bar recipe and find an entire subreddit dedicated to someone's grandma's family recipe being deciphered and tinkered with and shared across the world (r/JustHoodsLemonBars if anyone is interested!). This feels like the point of the internet - strangers across the world who will never meet can share little bits of joy and history with each other ๐ฅฐ

Matcha blondies! ๐ต๐ซ๐ฑ
I'm not much of a brownie/blondie person but these were so addictive. They had the perfect fudgy dense centre with the crackly top and a strong matcha flavour. I might make them a little thicker next time to really get that fudgy bite but the thinness really contributed to the snackability!

Chocolate, cookies and cream layer cake ๐ซ๐ช
A special birthday request which I had so much fun decorating with edible flowers from my garden!
A reminder that wherever life takes me, it's these little things that make it meaningful - watching things grow, feeding people and having opportunities to be creative. Beautiful spring days and a dog at my feet make it that much sweeter ๐ฅฐ

Lime loaf cake and sunsets ๐โ๐ฉ ๐
Sometimes when I'm walking my dog I try to pinpoint the exact moment it starts to turn dark but try as I might, I get lost in my thoughts or something I see. It's one of those curious things, like falling asleep - when you focus on it, it feels like a imperceptibly slow draining of colour but when forgotten, it's a quick blink and you miss it moment.
I managed to get a quick photo in the dying light as I pulled this loaf out of its tin and it captured that perfect cosy feeling of warm cake, winter days and my dog's content sighs ๐ฅฐ

Lemon tiramisu ๐๐๐
Made myself a small tupperware container of lemon tiramisu to use up leftovers from my last bake. I've come to especially love these impromptu fridge/pantry experiments, often messy and not aesthetic but they are satisfying and triumphant in their deliciousness!
Layers of spongefingers soaked in a citric acid syrup (I had no more lemons and thought I would try this which turned out surprisingly well) with lemon curd and lemon mascarpone whipped cream. It was especially enjoyable to open the fridge and have a couple of spoons straight from the container ๐คญ

Lemon and blueberry layer cake ๐๐ซ
This year my lemon tree had its first ever harvest and I'm so proud of it! It managed to survive three replantings and being brutally dug out by a brush turkey, so its gone through a lot in its short life ๐ณ
I used some to make this cake for my cousin's birthday - two layers of lemon cake dotted with blueberries, sandwiched with lemon mascarpone whipped cream, lemon curd and macerated blueberries.
There's something extra warm and fuzzy about seeing people you love share and enjoy something you made ๐ฅฐ

Tahini and salted macadamia brittle cookies ๐ช
I had leftover tahini caramel from my sticky date cake experiment which I turned into a brittle with toasted macadamia nuts. Chunks of brittle were folded into 's brown butter tahini cookie base and it turned out delicious!
I got to share these with a friend at our DIY paint and sip with matcha lattes and warm cookies on a cold afternoon ๐ฅฐ And now I have a freezer stash of cookie dough for whenever I have a sweet craving!
Also randomly found this beautiful chopping board that my sister made in her high school woodworking days. The wood grain was radiant in the afternoon sunshine ๐

Sticky date and salted tahini caramel cake ๐ฏ
I have never been a sticky date person, the ones I've had have been overwhelmingly sweet and drenched in too much sauce. But there's been six dates and the last dregs of a bottle of golden syrup sitting in the cupboard looking at me forlornly every time I bake ๐ฅบ
I tried to balance the sweetness by taking the caramel as far as I could, adding salt and whisking in some tahini at the end. It ended up being strangely moreish and savoury, which worked well with the sweet sponge base. There was a bit of leftover cream so I whipped it unsweetened as a light topping. It earned the coveted Asian parent compliment of 'not too sweet' so I'll take that as a success!

Rhubarb custard crumble cake! ๐ก๐ด๐ก
This is my new favourite way to use rhubarb (I've made it three times already!) - buttery cake with pockets of tart rhubarb compote and silky pastry cream, topped with chunky salty crumble. I highly recommend saving a little 'leftover' compote and pastry cream to enjoy by the spoonful while standing in the kitchen sun spot!
