After winning accolades such as Best in Show and Best Fete Baking at The Bobby Goldsmith Foundation's Annual Bake Off in 2010, Heng transitioned his passion into a thriving business. A qualified chef with experience at Sydney’s top restaurants, including the two-hatted Pello, he prides himself on crafting handmade macarons that are not only unique in texture and flavor but also made from high-quality ingredients like Callebaut chocolate and Maldon Sea Salt. Committed to authenticity, MakMak uses fresh fruit instead of artificial flavorings and incorporates native Australian ingredients like lemon myrtle and strawberry gum. Each macaron is intricately decorated by hand with artistic designs featuring leaves and flowers.

After 17 years, this is the year we say goodbye to our retail shop.

After much careful reflection, we have made the decision to close our shopfront and dedicate our full focus to our corporate creations and macaron masterclasses.

This marks a meaningful transition for us, and not one we arrive at lightly. It has been a true privilege to welcome you into our space and to share our creations with you in person. Each visit has been deeply valued, and we are sincerely grateful for the support and connection we have experienced over the years.

As we evolve, we are choosing to channel our energy into areas that allow us to continue refining our craft and delivering at the highest level.

The last days at the retail shop will be March 24 & 25, 11am - 5pm.

Our online boutique will remain open, with our collections available for delivery only.

To those who have made the journey to visit us, we extend our heartfelt appreciation. It has been an honour to serve you.

We look forward to continuing this journey with you online.

MakMak was founded by Carlos Heng, a passionate chef and macaron specialist with over 17 years of hands-on experience crafting premium macarons for both retail and high-end events. What began as a love for precision, flavour and beautiful pastry has grown into one of Sydney’s most recognised macaron brands, trusted by luxury names including Cartier, Louis Vuitton and Christian Dior.

All MakMak macaron classes are personally taught by the founder, offering students the rare opportunity to learn directly from the maker behind the brand. With a practical, detail-focused and approachable teaching style, each class goes beyond simply following a recipe — students gain a clear understanding of why each step matters.

During the class, participants learn the same professional techniques used daily in the MakMak kitchen, including:

• Italian meringue fundamentals
• Achieving correct batter consistency
• Piping and baking techniques
• Troubleshooting common macaron issues
• Producing consistent, professional-quality results at home

Classes are designed for all skill levels, from complete beginners to enthusiastic home bakers with personalised guidance and hands-on feedback.
