KINOENE Brewery Residency at Moku — 8–9 April 🍶
Moku Sydney is proud to host a special two-night Brewery Residency Pop-Up on 8–9 April, featuring Yoko Langford, representing KINOENE Brewery from Chiba, Japan.
Yoko Langford is a respected sake educator and industry advocate who has spent years introducing Japanese sake culture to Australia’s hospitality scene.
For this residency, Yoko will guide guests through the philosophy, craftsmanship, and regional character of KINOENE, a historic brewery known for its elegant, expressive styles and modern brewing precision.
Guests will experience a curated tasting of four KINOENE sakes, each showcasing a different expression of rice, aroma, and brewing technique.
• Umakara Migakihachiwari Junmai – Clean and savoury with balanced dryness and umami, a classic food-friendly style.
• Hanayaka Takuminokaori Junmai Ginjo – Delicate and floral with refined fruit aromatics and a silky finish.
• Iinuma Honke Apple Namazake – Fresh, lively, and vibrant, with bright apple-like aromas and juicy acidity.
• Hatsuyuki Junmai Daiginjo – Elegant and polished, with fine aromatics and a pure, graceful finish.
To elevate the experience, guests can add an optional four-course pairing ($50pp) crafted by the Moku kitchen:
• Sydney Rock Oyster, ponzu & finger lime
• Wagyu carpaccio, truffle oil, hibiscus teriyaki & sweet potato
• Chicken & leek tsukune with truffle ponzu & egg yolk
• Baked Ora King salmon with finger lime & caviar beurre blanc
