Opening NU’U in Sydney has been a journey of “early dreaming” and constant challenges, but the best part? Watching this space develop a soul of its own. There is no bigger reward than seeing familiar faces return and sharing a piece of our passion through every plate.

Nu’u is a love letter to Oaxaca and the dishes we grew up with rooted in tradition, family memories, and native ingredients.

Every recipe carries a story. Stories of early mornings in the market, the sound of tortillas hitting the comal, and the aroma of chiles and spices filling the air. These are the flavors that shaped us, the ones passed down through generations, not written in books but remembered through touch, instinct, and time.

At Nu’u, we honor those memories by recreating them with the same respect and intention. Handmade tortillas. Slow-cooked moles. Techniques that cannot be rushed. This is not just food it is identity, migration, sacrifice, and pride.

From Oaxaca to Sydney, this is our way of keeping those roots alive.

Growing up in Oaxaca, Mexico is something I wouldn’t trade for anything. Discovering the magic hidden in every street, every street food stall, and the stories behind the families who make a living through that food is something truly special, a magic only Oaxaca holds.
