A little chapter closes, but the story keeps going.

Unfortunately, our Noosa project did not work out the way we hoped. Different circumstances brought us to a point where we need to pause, regroup and slowly rebuild. These things happen in hospitality, and while it will take some time to recover, we will keep moving forward the only way we know how — with good food, good people and a positive spirit.

What makes us genuinely happy is that, even for a short time, we managed to bring a small breath of the atmosphere of St Blaise Matraville to Noosa through our little pop-up nights. For that, we are incredibly grateful.

Thank you to everyone who supported us, came to eat, sent messages, shared kind words, or helped us along the way. It truly meant a lot.

Our biggest emotional loss was having to repaint this beautiful fish mural created by the incredibly talented from Argentina. We hope one day we find a permanent home where art, hospitality and community can live together and be properly preserved and cherished.

And for those who missed us in Noosa — our little home in Sydney is always here waiting for you.

We’re really sorry if you’ve ever tried to book a table and couldn’t find a time that works for you. We genuinely wish we could welcome everyone in.

St Blaise is a very small restaurant, with a small team and very limited seating. Every service is cooked and run by the same few hands, and once the room is full — that’s it for the night.

Our booking system is always live and always honest. If a time or day isn’t available, it simply means we’re fully booked or we’re not open that day. There’s no hidden trick, no priority list, and no tables held back.

We know it can be frustrating, and we truly appreciate every person who tries to book, follows us, supports us, and understands how small independent restaurants work.

If you’re flexible with dates, booking a little ahead or checking back for cancellations usually helps. And when you do get a table — we promise we’ll look after you properly.

Dalmatinska pašticada… the quiet queen of our coastal kitchens, a dish where time, patience and memory come together in the most beautiful way.

For centuries, pašticada has been more than a recipe — it has been inheritance. Passed from grandmother to mother to daughter, guarded and perfected in every Dalmatian home. Beef marinated in prošek or wine, vinegar, herbs and vegetables, then left to braise for hours until it becomes tender enough to fall apart under its own weight.

And then there is its soul — that deep, sweet-sour sauce scented with cloves and a touch of cinnamon. Once upon a time, these spices were treasures, worth as much as gold. Families saved them for baptisms, feast days and important guests. Serving pašticada wasn’t just feeding people — it was honouring them, celebrating them, and yes, showing a little quiet pride that you had something rare in your kitchen.

Every bowl carried history: Venetian whispers, Mediterranean sun, old Dalmatian hands and Sunday tables full of stories.

In Dalmatia, spring was announced by one sacred meat: Capretto — the tender, milk-fed kid that only the village’s doctor or priest could usually claim. Its arrival marked renewal, abundance, and celebration, a taste so prized it carried the weight of tradition and favour. This season, we partnered with to source one perfect 5-week-old Capretto. Its meat is milky, sweet, and impossibly tender, just as the villagers would have savored centuries ago. We’ll lightly braise it with super young peas and fennel, letting the flavors of spring sing like they once did on the Adriatic coast. And the best part? No special title or favour required — anyone can taste this little piece of history.
