From today, Infinity by Mark Best is fully à la carte - seven days a week. Come for one course, share everything across the table, or somewhere in between. The choice is yours, 283 metres above Sydney.
The kitchen hasn’t changed. Every dish still draws exclusively from Australian growers, farmers, fishers and makers - the non-negotiable that’s been there since day one.
Mark Best: “I have spent my career defining what an Australian chef should be. What I add is the careful cooking of superlative Australian produce, and the celebration of the producers behind it. Great food is never about price, it’s about values.”
Venue Manager Phillipa Lane: “Whether that’s sharing dishes, trying a little bit of everything, or ordering your favourites, this is how I love to dine, and that’s the experience I wanted to bring to Infinity.”
Sunchoke terrine with truffles, buttermilk and tarragon. WA marron with corn and almonds. Line-caught coral trout with globe artichoke. Dry-aged duck with smoked plum and purple Brussels sprouts. A 500g 7+ wagyu sirloin on the bone for the table.

Over two nights last week, Infinity rotated through three worlds.
Perspective - created by Mark Best - took guests on a 90-minute journey across Sydney’s skyline, starting with drinks and snacks in Bar 83, then up into Infinity as the restaurant slowly turned above the city. Each course moved through a different landscape: Urban, Maritime, then Regional.
Custom scents from Sydney perfumer Craig Andrade (The Raconteur), original soundscapes from Blue Mountains artist Gail Priest, and portraits shot by Mark Best himself meant every chapter of the menu came with its own atmosphere - not just on the plate, but in the air and the room around you.
Thank you to everyone who joined us across both nights, and to chefmarkbest Jen Kwok and Polly Mackarel for shaping an experience built entirely around the people and places behind the food.
