What you’ll need
200 g frozen thin fries
1 tbsp melted butter

2 tbsp sugar
½ tsp cinnamon
Pinch of salt

2 scoops vanilla ice cream

Dulce de leche, to drizzle

How to make it

Cook the fries in the air fryer or oven according to packet instructions until golden and crispy.

While still hot, transfer to a bowl and drizzle with the melted butter.

In a small bowl, mix the sugar, cinnamon and a pinch of salt, then toss the fries until evenly coated.

Place the ice cream in a bowl and drizzle over the dulce de leche.

Serve the fries while hot with the ice cream for dipping.

A can of tuna goes a looooonggg way.

What you’ll need:

1 cup cooked sushi rice
1 can tuna, drained
½ cup cherry tomatoes, finely chopped
2 tbsp finely diced red onion
1 small jalapeño, finely chopped
2 tbsp chopped coriander
1 tbsp lime juice
Salt, to taste
½ cup store bought guacamole
Chipotle hot sauce, to drizzle
Olive oil

How to make it:

In a bowl, combine the tuna, cherry tomatoes, red onion, jalapeño, coriander, lime juice and a pinch of salt. Mix gently and set aside.

Place the cooked sushi rice into a sandwich press and press down until flat.

Drizzle with a little olive oil and cook until golden and crispy.

Spread a thin layer of guacamole over the crispy rice tostadas. Top with the tuna mixture.

Finish with a drizzle of chipotle hot sauce.

It’s apple pie season, baby!

What you’ll need:
2 medium apples, peeled and chopped
1 tbsp sugar alternative
Cinnamon and nutmeg, to taste
15–20 g Biscoff spread
40 ml water
½ tsp cornflour
4 rice paper sheets
1 egg
1 tbsp milk
Cinnamon sugar, to finish
Olive oil spray

How to make it:
Add the chopped apples to a pan over medium heat with the sugar alternative, cinnamon and nutmeg. Cook until softened.

Stir in the Biscoff until melted. Mix the water and cornflour together, pour into the pan and cook briefly until thick. Remove from the heat and let cool.

Whisk the egg and milk together in a bowl.

Dip one rice paper sheet into the egg mixture until softened and place it on a flat surface. Spoon a small amount of filling into the centre. Fold the bottom up, then the sides in, and finish by folding the top down to form a small pocket.

Dip a second rice paper sheet into the egg mixture, place the filled parcel in the centre, and fold again to create a double layer. Repeat to make four pockets

Lightly spray with olive oil and sprinkle with cinnamon sugar.

Air fry at 200 °C for 10–12 minutes, until crisp and golden.

Cheese 🤝 Potatoes 🤝 Sandwich Press = crissssspy cheesy potato chips.

What you’ll need:

• 1 medium potato
• 1 cup finely grated parmesan
• Salt, to taste
• Garlic aioli, to serve

How to make it:

Use a mandoline to slice the potato as thinly as possible. Pat the slices dry with paper towel to remove excess moisture.

Preheat a sandwich press. Sprinkle small, thin circles of grated parmesan directly onto the hot surface.

Place one very thin potato slice directly on top of each parmesan circle. Lightly season with salt.

Close the sandwich press and press down firmly. Cook for 4–6 minutes, until golden and crisp.

Carefully lift out and allow to cool slightly so they firm up.

Serve warm with garlic aioli for dipping.

Hot chook, what can’t you do?

What you’ll need:

1 hot roast chicken (use ~½)

½ cup Greek yoghurt

Juice of ½ lemon

1 tsp paprika

½ tsp each: cumin, coriander, garlic powder

Salt + pepper

2 large wraps or Lebanese flatbreads

½ small red onion, sliced

Pickles

Garlic sauce or aioli

Red glaze:

2 tbsp olive oil

1 tbsp tomato paste
1 tsp paprika
½ tsp chilli flakes
1.5 tbsp lemon juice
1 tsp honey
Salt

How to make it:

Shred half the chicken in the bag. Add yoghurt, lemon juice, spices, salt + pepper. Shake to coat.

Spread garlic sauce on wraps. Add chicken, onion + pickles. Fold tightly.

Mix glaze ingredients. Brush over wraps.

Toast in a sandwich press (3–5 mins) until golden + crispy.

Dumplings 🤝 burgers 🤝 lasagne.

What you’ll need:

300g beef mince

1 tbsp very finely diced brown onion

1 tbsp ketchup

1 tsp mustard

½ tsp garlic powder

Salt and pepper, to taste

12–15 wonton wrappers

1½ cups shredded mozzarella

8–10 pickle slices

1 tbsp burger sauce, to serve

Sesame seeds, to garnish

Chives or finely diced onion, to garnish

How to make it:

Combine beef mince, onion, ketchup, mustard, garlic powder, salt, and pepper.

Briefly dip wonton wrappers in water to soften.

Line the base of an 18–20 cm dish with a layer of softened wrappers.

Spread half the beef mixture, half the mozzarella, and half the pickles over the base.

Repeat the layers once more, finishing with a final layer of wonton wrappers.

Place the dish in a steamer over simmering water and cover.

Steam for 18–22 minutes until the beef is cooked through.

Rest for 5 minutes, then slice and top with burger sauce, sesame seeds, and chives.
