When tomatoes are cheap, do yourself a favour and make a bulk batch of roasted tomatoes with onion, garlic, olive oil, salt and pepper. Keep it chunky or blitz to a smooth sauce. So good for pasta, add to meatballs, turn into soup or just smoosh onto bread. One of my fave summer batch cooks for the week ahead.
