Here’s the meat… overall, worked out great - even if the beef ribs always look cremated. Wings were great - the pre-salt and baking soda really help them crisp up.
We also had two types of bread, beans and a vinegar slaw (sample size shown). Cake to round it out… best dessert was a nap on the couch :)

The gift I assume every mother would like for Mother’s Day - two racks of brown sugar spares and a rosemary rack of beef back ribs…

Walked up to the always lovely Berowra Market this morning to grab some of my favourites. Had a bit of a reminiscence and kind of missed setting up the tent and slinging smoked meats…
But surely no one would eat a brisket and egg roll at this time of morning - particularly not if it had garlic chilli sauce and pickled banana peppers on it, right?

Over the moon with the awesome birthday package from The Heckin Good Bakery for my 11 year old lab (not shown - photos in next post!)
The quality of the product is never a question - always high quality, always gets demolished - but the quality of the people behind Heckin Good are also amazing!
Whilst ordering they were great to communicate with, prompt, delivered on time - just all round great to deal with :)
I’ll be dropping by and seeing them at Berowra Markets this Saturday. If you have a dog, you should too :)

If you’re out in Parramatta, I recommend this place - good price, excellent food, lovely service. We took cheese off both of these sandwiches, so yours will have more on it 🙂
Enjoyed the setting and the tunes also - I will be back in about a week to put a hurting on their breakfast options.
Yes, they have a cheesesteak 🙂

Quick PSA for those Sydneysiders heading to the Easter Show:
*Get at least one meal from Smoking Gringos - these are the best tacos out there for sure (consume not pictured!)
*Drop by and check out some of the new food stalls in the Woolworths Hall. We grabbed these nifty cookie/hot chocolate kits from Sweet Health, firing one up tomorrow 🙂
*Women’s Work and The Fermentalists are still cranking out the good stuff - definitely worth a gander.

Cracking meal with the family tonight down at Mt Colah Pizzeria & Cafe. Great food, great price, nice digs.

I think if I was the start this business over, I’d call it ‘Chief Beef’.
Two of my kids are in this photo - give them a tiny trolley and let them at it. Ended up with more lollipops than usual…

Another absolutely ripping (and inspiring!) video from Alvin. He always finds the best looking food, and the most interesting characters.
Looking at all the hard work behind something like this “just to make a sandwich” is a good reminder why I barely do it part time.
But, come at me with a good cause (a fundraiser, community group, someone who needs help) and I’ll fire it up and get involved.

We cook one of these to celebrate or commiserate… not sure why we did this one, but it was pretty alright.
In a lot of ways, knocking up one of these is easier than a bunch of snags - takes a bit longer, but much less hands on.

As promised, here’s that other pork joint. I believe it was a pork rib roast - 4 bones worth.
Looks like there’s a schnitzel draped over the top, but it’s just the crackling - which was like glass. Hot honey carrots, super baked potatoes and brocolini.

Xmas lunch… and some was left for Boxing Day too.
For all this food, it was a low stress day - which was very much needed! Had the realisation that we can just do this, no need to wait for Xmas - so expect another pork roast shortly, and a fancy salad 🙂

Here’s a couple of things that’ll hit the table on the big day…
The meat is dry bringing for 48 hours, before the rest of the flavour is added. That’s a 2kg, two bone rib roast.
My 3 year old has already bagsed some of the spinalis. I wish her well with that request :)

Managed to Big Dog the breakfast to celebrate the kids end of school year 🙂
Argentinean caramel, chopped up chocolate, and the rest is obvious. That Yeti bowl kept the frozen stuff frozen the whole time - well worth it.
