Wine of the week: Mersel Elevate Pinot Noir. High altitude Pinot, organic farming, aged in clay amphora for 1 year - this is a showstopper, and one of the few single varietal wines coming out of Lebanon which can rival a French burgundy any day of the week. We only have a few bottles, as imports are harder than ever to secure.

We have an oak barrel sitting on the front counter, which is lightly charred and then we flavour it with muscat for 3 days, after which we use our favourite Lebanese gin, two types of vermouth, one for body and one for aroma, then add Campari and let it sit until it tastes just right (this batch took 44 days) at which point we bottle it, and proceed to fight our front of house team off with a stick to keep them at bay 🤣 🍸
