This isn’t gnocchi as you know it. 🇫🇷
It’s Parisian-style, baked with aged Comté until golden, then smothered in a Riesling chicken velouté with mushrooms for good measure.
It's the sort of dish that doesn’t try to impress, yet absolutely does.

Pardon our French, but you'll want to try these 🇫🇷
Our Bœuf Bourguignon is now served with pommes boulangère and bacon, and according to Chef Ludo, it simply doesn’t get better than this.
And then there's our Gnocchi à la Parisienne, baked with aged Comté and finished with a Riesling chicken velouté and mushrooms. They're making quite the entrance.

It’s raclette season 🧀 You can pretend it’s “for the table”… (as if we’re not all just waiting for our turn).
Best served gooey, we let it melt just a little bit out of control and scrape it generously.

A little chocolate mousse for your Easter table 🇫🇷🍫
Hosting this Easter?
Here’s something simple from our kitchen — a proper French chocolate mousse.
Easy to make, easy to serve… and just impressive enough to win over the table.
(Top it with a few mini eggs and the kids are sorted too.)
👉 Ingredients
250g dark chocolate
220g egg whites
40g sugar
2 egg yolks
Pinch of salt
👉 Method (quick version)
– Melt chocolate gently and let it cool
– Mix in egg yolks
– Whip egg whites + sugar to soft peaks
– Fold everything together carefully
– Chill for 2–3 hours
👉 Chef tip
Use a good dark chocolate (60–70%).
That’s where the magic is.

A true French classic, cooked the traditional way, slowly preserved in its own fat, the method that gives it that deep flavour and tender texture you can’t rush.
Finished until the skin turns crisp, served with ratatouille and a proper red wine shallot sauce.
The kind of classic that never leaves the menu.

Estouffade d’agneau Provençale.
From the south of France, where dishes like this stay on the stove all afternoon… and nobody complains.
A proper Provençal classic: lamb braised low and slow until tender, with olives, vegetables and herbs all melting into each other.
The kind of dish that’s been done like this for generations… and for good reason.
