Did you know our oven was hand made in Naples???
Stefano Ferrara Forni is a third-generation company using the techniques & secrets handed down from generation to generation for building Neapolitan pizza ovens.
Naples & the surrounding area provides all the materials, making the oven as distinctly regional as Neapolitan Pizza itself.
The cooking stone is made from Biscotti di Sorento. Essentially, it’s a giant clay brick with an incredibly smooth surface. The quality of the clay means that it retains heat very efficiently, providing an evenly hot surface that cooks the base of the pizza without burning it, during its 60-90 seconds in the oven.
The crown and dome are made from volcanic ash & refractory bricks that are 60mm thick, able to withstand temperatures of over 900 degrees Celsius. Standing next to our oven you can feel the intense heat radiating from it even through the handmade mosaic tiles on the exterior.
The domed shape of the oven is key for the proper circulation of air, which is needed to achieve very high and consistent temperatures. Cold air is drawn into the oven through the opening at the front and is heated as it moves towards the back of the oven. As it gets hotter it rises and flows around the curved rear and back towards the front, this time at the top. The combination of heat-retaining materials and the domed shape cooks the pizzas to perfection.
Most famously, the wood-fired oven at Pizzeria Brandi in Naples (the original Pizzaiolo cooked & named the Margherita Pizza after Queen Margherita of Savoy in 1889) was built by master oven maker Stefano Ferrara’s family around 1977, Stefano was 13 years old & helped his father construct it.
Due to its weight, we literally built our restaurant around our oven, it is the centrepiece & majesty of the restaurant & has been going strong now for 12 1/2 years.

Meet Jorja Carroll … You can’t be a true family restaurant without the next generation & we have been fortunate enough to have had Jorja join us at most of our restaurants over the years.
Being bought up in restaurants as a child means you are dragged along after school & weekends to help out, so your homework is done out the back sitting on freezers during service waiting for Mum to finish her ‘I won’t be long shift’, hours later you make it home.
Needless to say her work ethic in hospitality has been ingrained & is second to none. Over the last 10 years Jorja has been our Head Pizzaiola alongside Lee, whom has passed all his knowledge, and as far as we know is the only Neapolitan trained Pizzaiola in Australia. The hours are long & physical & she does it with a smile (most of the time 😅)
Fast forward to 2026, she has joined forces with Fabio & Wilson on the dining room floor, which makes for an incredible service team.
Side note, Jorja has been singing & performing since she was 8 years old, gigging at our very own local music venue The Brass Monkey since she was 15 years old & is currently working on her debut album due out next year!

There are many pizza types, as per the Neapolitan way, we keep it simple, pure Neapolitan products & after 12 years, a wealth of knowledge that only comes from working with a wood fired oven and a passion for the dough we make everyday.
