Well “Tonys Steak Tour” of Spains best is done. The dream was to hit all of Spains top 5 streak houses and I did it. The last stop on the tour was El Capricho (same owner as La Cúpula) #10 steak house in the world. And it didn’t disappoint. Jose the owner/head chef treated us like absolute rock stars at both venues. Such a humble human and to be honest he’s also a nutter to do what he does. We had a 14 year yr old Ox raised on his own farm that was 180 days dry aged. An experience I’ll never ever forget. And to do the whole gig with my very good mate Gerard was an absolute blessing. Thx bro for all the great shots (f**k all of us 🤣🤣) and for driving. So much love for you. Would have no been what is was without you ❤️
Tomorrow I fly to Italy to chill and just take a full step back and drive down the coast by myself with zero plans daily and get off social media for a while.
My staff are rockstars, hence why I can be here 🙏

gonna be brutally honest here cause theres too much bu****it on social media and we send the wrong message to the younger generation. Being a small hospitality business owner is a tough f**ken gig. Especially when you spend 7 years dreaming of expanding for a second time in 11 years and it all falls to s**t. Cause that’s exactly what happened to me. I tried twice and crashed twice, (plus i survived 2 lockdowns where many unfortunately shut their doors) The Enmore loss hit me the hardest cause I had a lot more experience behind me. My biggest mistake was that money was the driving force, and let’s face it, there’s a little ego in there too 😊 it’s not wrong to try chase some more coin, but in this game ya got have passion!
Bonditonys was built on pure 100% passion. I remember from day one I was just happy if I could make a living off it.
But it all kinda went pear shaped when I had 2 venues. I was losing coin weekly and went through massive depression behind closed doors.
So I made the conscious decision to stop feeling sorry for myself and go back to Bondi and get the old school magic back. I was more aware this time that I needed a team that had my back and cared as much as I did. So I pulled together a crew that was unstoppable and drive themselves. Over the course of the next 18 months we all worked incredibly hard. I had bought in an amazing new head chef and venue manager and by jan 2026 we had the team in place that I believed would give this place its magic back. We went on to have some of our biggest months on record earlier this year and EOFY 2026 was to be our best ever. It took a full 18 months and an amazing support network of wonderful humans where everyone gave a f**k. I was also in a much better head space so I could see what made my staff tick.
At one stage I almost threw in the towel and sold the joint. I know that I would have regretted that decision for the rest of my life. Cause that would mean that I gave up and what kinda example would that be to my son.
been a tough run, and if I did give up I wouldn’t be where I am right now drinking nice glass of red at Laia Erretegia in Spain 🇪🇸

By far one of the most amazing food experiences I’ve ever had dining. Arrived at 6pm to wait in line in the rain for 7.30pm open. Then told you’ll be seated at 8.45pm. So went to a rock bar and did shots. I’ve waited 2 years to dine here. Worth every f**ken minute. Manifesting life!! ❤️❤️❤️

If ya gonna review any venue , be constrictive and try and help that venue be better. Don’t be like Akash. Running a venue in this day and age is a bloody hard grind. Let’s be nice humans and lift each other up….not down !!!

HAPPY 18th BIRTHDAY to this absolute legend of a son. I’m posting this photo as it’s my mums favorite photo of us. As a father you just hope that your son grows up to be a healthy respectful young man and boy I won the lottery with Atticus. He is the kindest most giving person with such impeccable manners and is truly a joy to be around. Having him work at Bonditonys ( and adding his name to the company logo ) is a dream come true and all my staff genuinely love him ( not just cause he’s the boss’s son🤪) No staying awake at night wondering where my boy is, as he did the complete opposite to Dad, and doesn’t drink. 🤣

Today we celebrate 11 years of serving you all our yummy grub!
Every year is a challenge and this past year has certainly been something special. This venue is on another level and I could not be more grateful right now.
Having and as my managers has been a blessing and the return of .sim has also been a winner for us.
To all my staff, you’re a bunch of rockstars and this can’t be done without your love each day. And to our amazing bondi community who have had our backs all this time 🕺
To top it off just this morning incl us in a list of top 10 burgers in Australia. Blessed day it is 🙏
