Executive Chef Santiago Aristizabal's Beef Tasting Menu at Rockpool Bar & Grill Sydney is a five-course exploration of some of the world's finest beef, drawing from the breadth of Latin American culinary tradition with each course. From the bone marrow and oxtail of the opening, through the sirloin tartare and the spinalis with wattleseed mole, to the rump cap arepa that honours Chef Santiago's Colombian heritage, the menu is a considered and deeply personal expression of craft. Filippo L’Episcopo is our new Head Sommelier at Rockpool Bar & Grill Sydney.
Hailing from Sicily, Filippo grew up on the taste of grapes as he played in his grandfather’s small vineyard and olive grove, which serviced the family thirst for wine and produced their olive oil.
“I’ve been eating grapes off the vines since I could walk,” he says.
Later, as a bartender in London, his passion for wine flourished. He became a Sommelier, travelled the vineyards of Europe and studied wine. It has been a never-ending educational journey for Filippo ever since. Welcome to the team, Filippo!
