Every cut on the Rockpool menu begins long before it reaches the grill. The beef program that Santiago Aristizabal has built is one of the most considered in the country, built around exceptional Australian producers, in-house dry ageing and a butchery process that happens daily, because the standard this kitchen holds itself to does not accommodate shortcuts.
Among the many exceptional options, you’ll find the dry-aged T-Bone, the Entrana, the Chuleta and the Picanha, each representing a different expression of that program, cuts chosen not for convenience but for what they are capable of when they meet the right amount of time, care and fire. These are not simply cuts on a menu. They are the result of a program that treats beef with the reverence it deserves, from the paddock to the pass.

There is a discipline in sourcing that runs through every decision on the Rockpool menu, from the beef that is butchered in-house daily to the seafood that travels from some of Australia's most exceptional coastal waters to our wood fire grill.
The Half Coral Trout makes that journey from the Great Barrier Reef - grilled over open flame and served with vongole, lime leaf and tamarind jam, the brightness of the sauce drawing out everything the fire has built into the fish.
The Whole Southern Calamari comes from the pristine waters of Victoria's Corner Inlet, where the calamari is something the wood fire grill can do something genuinely remarkable with, finished with jamon and morita chilli that brings warmth and depth in equal measure.
Two dishes. The same standard that has always defined this kitchen.

Before the ribeye, before the tenderloin, there was the Picanha. The rump cap has been the centrepiece of South American grilling culture for generations, and it is the cut that Santiago Aristizabal grew up understanding in a way that no culinary training can teach. At Rockpool Melbourne, it arrives as Pure Black F1 Wagyu, dry aged in-house, at 1.2kg and finished with chimichurri that carries the same weight of heritage as the cut itself. This is not a chef interpreting a tradition from a distance. This is a chef cooking the dish that was always his to cook.

Westholme F1 Wagyu, sourced from one of Australia’s most respected producers, brings exceptional depth of flavour and a generous marbling that rewards the heat of an open flame. Filippo L’Episcopo is our new Head Sommelier at Rockpool Bar & Grill Sydney.
Hailing from Sicily, Filippo grew up on the taste of grapes as he played in his grandfather’s small vineyard and olive grove, which serviced the family thirst for wine and produced their olive oil.
“I’ve been eating grapes off the vines since I could walk,” he says.
Later, as a bartender in London, his passion for wine flourished. He became a Sommelier, travelled the vineyards of Europe and studied wine. It has been a never-ending educational journey for Filippo ever since. Welcome to the team, Filippo!

To get to the restaurant located on Hunter Street in Sydney, those using public transportation can take a train to Wynyard Station and then walk south towards Barrack Street until reaching the destination. Alternatively, there are several bus stops nearby that service multiple routes.
