This is the best part. When we are serving, talking to guests, seeing their smiles ๐. And even better when they keep telling us how delicious the food is ๐โโ๏ธ.. haha hey who doesn't love a compliment??
This part is usually sandwiched by a couple hours of logistics, carrying, bump-in, bump-out, load, unload, load again, unload again.
But in the end, it's all worth it!

Last week we created something very special โจ
A concept that was born out of our own need to bring some joy back into our work, turned out to be an exciting and delicious night.
A menu based around one hero ingredient = some crazy ideas! A carrot cocktail??? Canapรฉs served on a bed of 'fake' soil?? (actually spent coffee grounds ๐) Yes. And omg that cocktail was too easy to drink ๐ซ .
A mind map written with black marker on steel benches to showcase how we turned a carrot into 10+ different textures, shapes and dishes. Laid out for our guests to explore while they enjoyed the dishes.
We are so happy with how it turned out, and the vibe in the room was just magical!
Thinking we should make this a regular thing... ๐ค

A hundred guests at โ has to be one of the most beautiful wedding venues in Sydney. The kind of clear afternoon that makes the harbour look almost designed ๐
The main was a dish that's been in our menu for nearly a decade and we just can't seem to be able to stop serving: our Miso charred King Salmon (NZ).
And for the DJ table, by , a pair of vintage turntables with a stack of vinyls, an Aretha Now sleeve out front. Coolest set we've ever seen ๐ฅ

Couldn't have asked for a better brief from , for the Butter Lounge series by for
Massive mountain of whipped brown butter and sage, anchovies on butter pastry, radishes and bread (of course), corn cake with pistachio butter and our latest invention - the Apple Cloud (topped with dulce de leche and house jam).
We loved it, they loved it. I mean, it's butter. ๐ง

Always a treat being back in The Collider. That dome in the middle of the room is something else, so iconic!

Our leek terrine was the entrรฉe at C&J' wedding last month.
The whole leek goes into the dish โ including the roots, which we fry into the crispy strands you can see on top. Dusted with burnt onion skin ash, set on a potato anglaise. The leek and the onion both used end to end.
One of our favourites to send out. Beautiful on the plate, and a genuinely zero-waste course.

Turns out an apple can be a marshmallow. Who knew!
We've been playing with it as a new canapรฉ, the Apple Cloud, we're calling it. Pillowy, sweet, with a little caramelised peel crisp on top so the whole apple gets used. Zero waste ๐ช๐

A few weeks before their wedding at , our couple C&J got in touch and asked if we could use some platters her family owned for canapรฉ hour.
We LOVED them. They turned out to be a set of beautiful ceramics โ different patterns, different sizes. It's the kind of small request that ends up making the whole event feel personal.

Cacio e Pepe = creamy, rich, cheesy sauce
Putanesca = saucy, briny (capers), comforting sauce

Incorporating dietary requirements into a menu doesn't have to compromise on flavour. This is one of our favourite canapรฉs at the moment - betel leaf, green papaya salad, pineapple jam, and a punchy nuoc cham-style dressing. Gluten free and plant-based.

๐จ New Cocktail Trolley - TEPACHE Spritz ๐๐น!
Wow! Couldn't be more excited about this new cocktail. Over the past (many) months we have been developing a zero-waste drink in-house, called Tepache - it's a fermented fizzy drink similar to a sweet Kombucha, which we make from surplus fruit dropped to us by our veg supplier. Thanks to chefs Joseph and Eun for this product ๐
The cocktail was expertly put together by the legend in the photo, Patrick our Radish Event Supervisor. We mix the Tepache with Aussie Prosecco and a native davidson plum aperitif by . The result is a refreshing and delicious spritz with a great story.
