For The Fitz, that moment arrives every summer on Cathedral Street.
Cathedral in Bloom blends Bombay Sapphire gin with green jasmine, strawberry gum, dragon fruit and pistachio orgeat — a bright, fragrant serve finished with matcha dust and florals. A tribute to the jacarandas in full bloom, and the way they transform Woolloomooloo for a few short weeks each year.
