Our Roo Fillet is a ripper of a dish.

Perfectly seared tender, Kangaroo on a bed of roasted dutch carrots, sweet potato mash and a house-made beetroot marmalade on top. The sweetness plays with the gaminess beautifully.

How good is it being able to cook with an indigenous ingredient like kangaroo, it just goes bouncing out the door.
