After nine and a half years of service at 96 Pitt Street, Redfern, my last dinner there will be this coming Sunday night.
I now look forward to another chapter in my life where I can spend more time with my wife Jane and two children as they grow up and go through school. Life is short and moves fast, and I want to get to know William and Zoe a little better now.
I have been blessed with many great relationships through running the Bistro and have definitely learnt a lot about food, wine and people in the process.
Although I like to get on my soapbox about organic this, and sustainable that, (and do consider ecological issues very real and pressing) in the end, the quality of our endeavours comes down to relationships with others and ourselves (how we see the world).
I want to thank all our staff who helped us develop the Bistro along the way, as well as our hard working providores and farmers, and I wish you, our generous (and forgiving!) customers, all the very best.
We leave the business in the capable hands and heart of Nick Stone, a gentleman with excellent food credentials with Mona, Tasmania, one of the kitchens on his impressive resume. Like me, he will be "on the floor" with you, and you will be happy to hear that Chef Brett will remain in the kitchen. I wish Nick all the best, and have great confidence in him.
I would like to personally thank as many of you as possible this week/end if you can make it to the Bistro for a meal. I will be there all weekend. And of course, our lives being busy and varied, I understand I will not see you all, so, thank you, if this is it.
