Nilgiri’s is proud to support & play a small part in this Fundraiser to support Aaveer & Olivia as they represent Australia at the 420 Youth & World Sailing Championships.

Our young sailors, who have "grown up" eating our Murgh Makhani aka Butter Chicken, have set up a page through the Australian Sports Foundation to help pay for their expenses. It was only natural that when we stepped in to help them achieve their goal.

We felt we could kill two birds with one stone – feeding all of you their favourite meal, whilst raising money to contribute to their fundraiser. We have a set up a “Young Aussie Fundraiser Meal” in our Takeaway Specials page. All you have to do is order for pick-up on Saturday, 30th May 2026 between 4.30 & 5.30 pm. It's that simple!!

Aaveer & Olivia will be there personally to hand over your dinner at Nilgiri’s. And feel free to order extras from our regular Takeaway Menu at the same time. And please do help us help them…

Hello everyone,

It’s my turn to hold the fort as Ajoy meanders his way through New Zealand on a wine pilgrimage 🍷

He’s clearly living the dream - meeting passionate winemakers… and, naturally, “working hard” tasting wines along the way!! At this point, who knows when he will return… Between the wines, the scenery & the hospitality, we may need to file a missing persons report soon 😄

Though I suspect that if & when he decides to come back to some actual “work”, you will soon see a number of those wines appearing on our list - each with a story attached, no doubt 😊

In the meantime, we are into the final couple of weeks of our Raj Menu, so, don’t leave it too long to visit us. And a gentle reminder that we are now open on Tuesdays as well...

Postcards from Bangalore

As you probably know, I have been away in Bangalore - or Bengaluru, as it’s now known - for a weeks now.

Dawn walks culminate daily at the local for strong filter coffee. The days unfold with visits to street carts and roadside vendors selling fruits, vegetables, and everything in between. And of course, the ever-reliable auto rickshaws getting from A to B… or sometimes all the way to Z.

Most importantly, time with family and friends - lots of laughs, eats & hugs.

I will let the photos speak for themselves. India is calling… and she’s waiting for you!

Anglo-Indian Roast Chicken

A beautiful marriage of British and Indian roasting traditions. This dish brings together classic Indian spices, deghi mirch, black pepper, tamarind, garlic, ginger, and our own garam masala, marinated for a few hours and finished 'on' the tandoor.

Unlike a traditional Western roast or a yoghurt led tandoori chicken, this version is defined by a robust aromatic dry marinade, layered with a little 'heat'(mirch), gentle acidity(khatas), and smokiness from mustard oil!!

Served with Nilgiri’s signature tikka masala sauce!

What an absolute pleasure it was cooking alongside Chef Penny from Bali Asli - bringing together the bold, spice-driven flavours of Chettinad and the vibrant soul of Balinese cuisine.

So much energy, so many smiles, and as you can see… everyone had an awesome time!

Whilst Penny is busy gathering, foraging and collecting ingredients for Monday’s big Cooking Class, Ajoy is… nowhere to be seen.

One can only assume he was conducting very serious culinary research, perhaps chasing down a rare spice, an old recipe… or maybe a drop or two of the golden elixir that makes the cooking stories flow...

Ah, found him... the glass in hand tells the full story!!

The response to our cooking classes has been so wonderful that we’ve managed to squeeze in a couple more places for Monday, 16 March.

So if you’re a last-minute straggler who enjoys spices, stories, and the occasional well-earned sip, do come and join the fun.

When two Chefs, penny from and I, from two distinct cuisines, are handed one shared basket of ingredients - the only possible outcome is fun!!

, penny is the classically-trained Chef of Bali Asli in Indonesia, which opens a window into the real Bali through cooking classes, culinary adventures and cultural immersions .

Our cuisines have shared turmeric, chilli, ginger, coconut & coriander for centuries. Yet the way we treat them tells very different stories. Join us for a special hands-on masterclass, where we explore these five humble ingredients through two ancient culinary traditions.

You will grind, pound, temper & layer ingredients to cook some amazing food from both cuisines.
You will taste the difference technique makes.
You will discover how the same kitchen can produce entirely different memories.

This intimate, hands-on Cooking Class is a celebration of creativity, contrast, great company - and plenty of stories along the way.

Our Anglo-Indian menu is travelling—quite literally.

With private catering engagements across Sydney, this menu has found its audience, striking a balance between familiarity, nostalgia, and quiet indulgence.

Last week, it arrived in Greenwich for an intimate private gathering, Anglo-Indian classics, green peas samosas with spicy apple chutney, green masala paneer, chicken Koontry koptain, devilled fish....served in a private home, accompanied by thoughtfully chosen wines and good company.

No restaurant tables.
No formalities.

The Story of Prawns Bandi Coy

Prawns Bandi Coy belongs to the world of railway lines, dak bungalows and cantonments - where food had to travel well, cook quickly, and please many palates at once.

Bandi comes from "bandi gaadi" - the cart or carriage. "Coy" is almost certainly Anglo-Indian shorthand for a spiced dish cooked in “company style” in the mess halls and railway kitchens of the Raj era.

Fresh prawns were ideal for these kitchens: quick to cook and widely available along India’s coasts and river towns. They were lightly spiced with turmeric, pepper, ginger and garlic, then briefly simmered with onions, tomatoes, vinegar and green chillies. Curry leaves often found their way in, and in the south, a splash of coconut milk, sometimes with okra, rounded out the dish.

The result is a dish that is gently spiced yet deeply flavoured, comforting without being heavy. Born of travel, patience and shared tables, where the clink of cutlery mingled with the whistle of a train departing an Indian station, pre-1947.

Ashes fever is here & the Barmy Army is singing, the Aussies are sweating, and some things never change - you can’t beat a proper Nilgiri’s Biryani.

Our Classic Anglo-Indian Chicken Biryani is delicately spiced with saffron, mace & cardamom, layered through fragrant basmati rice and served with traditional mixed veg khurma. Built for long matches, long dinners and post-match banter!!

Best enjoyed with a glass of Chenin Blanc - because even die-hard supporters need a drink between overs 🍷
