What happens when one of India’s most nostalgic comfort meals becomes dessert? 👀
This.
KADHI CHAWAL REIMAGINED — a dessert that starts with the memory of Punjabi kadhi chawal and flips it completely on its head.
Sweet kadhi custard.
Subtly sweet rice.
Punjabi-pickle crumb.
Candied curry leaf.
Familiar. Confusing. Emotional. Delicious.
A dish that shouldn’t work… but somehow absolutely does.
This is exactly what Neo-Indian means to us at Masala Theory — taking flavours people grew up with and pushing them somewhere completely unexpected.
Not inspired by tradition.
In conversation with it.
Created in collaboration with pastry chef 👏
