Introducing our new winter menu.
This is the kind of cooking we crave when the temperature drops.
Start with something raw. Tuna crudo with grilled tomato salsa, shallots and native pepper. Or Wagyu beef tartare with shiso, ponzu, baby capers, and a nori cracker that shatters just so.
For the main event. Perhaps the prawn pasta, tangled in a bisque sauce with fennel and tarragon salsa. Or the hand-rolled porchetta with Bilpin apples, seeded mustard, and Davidson plum. The smoked beef rib arrives with Paris mash and salmoriglio, finished with dried rosemary.

A humbling day. A meaningful night.
Earlier this week, joined Ryan Gill for the launch of Passport on a Plate, a cookbook written by a young boy who wants to help sick children travel the world through food. Inspiring doesn’t quite cover it.
Next week, he’ll be cooking at the Starlight Five Chefs Dinner (Thursday 18 June) raising funds so more kids like Ryan can access the care they need, and the moments of joy they deserve.
Food can’t fix everything. But it can bring people together. And sometimes, that’s where the magic starts.
