The most beautiful distillation of what is about, shared by my favorite chef, Helly Raichura of Enter Via Laundry, in Broadsheet Melbourne ‘s innovators column.

I’ve admired Helly for years. She’s been quietly pioneering modern Indian cooking in Australia ~ menus built on traditional techniques, cultural integrity and seasonality, speaking to Indian and global palates alike. That’s no small feat when you’re also running a business and educating every table that walks in, in a country that believes Indian food is naan & curry.

So hearing that someone I look up to this much sees something in what we’re doing at Flyover, that means everything. Thank you, Helly & Broadsheet for including us.
