This latest honour adds even more excitement as we prepare to welcome SingleThread to Bathers’ Pavilion for an exclusive four-week residency by the water.

This latest honour adds even more excitement as we prepare to welcome SingleThread to Bathers’ Pavilion for an exclusive four-week residency by the water.

Bathers’ Bistro Winter Special 💫 Join us in the Bistro for our new Winter Weeknight specials, available Sunday to Thursday from 5pm to 7pm.

Slow-cooked duck leg, braised in red wine, orange and juniper, served with mashed potato and confit eschalots, paired with a glass of Springvale Melrose Pinot Noir for $45.

Or enjoy a seafood risotto with prawns, snapper and mussels, served with a glass of Giant Steps Circle of Fifths Chardonnay for $52.

Ahead of the residency, the Bathers’ Pavilion team travelled to Sonoma to experience the farm that shapes every part of the SingleThread story.

Set across 24 acres in Dry Creek Valley, the farm is home to greenhouses, heirloom orchards, beehives and an expansive floral program, all influencing the menu, the table and the rhythm of the dining experience.

This winter, that philosophy comes to Balmoral.

On Saturday, 13 June, we invite you to join us for an intimate wine dinner by the water, hosted by Mattia Benevello of renowned Barolo producer Paolo Scavino.
