Beef carpaccio has been on Italian tables since 1950. Ours has a small twist. The dressing takes the same olive, caper and anchovy that sit on the martini tray, so the dish and the drink taste like they belong together. Because they do. Part of the 7-Minute Martini, $35, Tuesday to Saturday.

Zabaione gelato: egg yolks, sugar and Marsala. Then a fresh espresso poured over it at the table, with a shot of sweet Marsala on the side. Affogato allo zabaione. Dessert and digestivo in one order.

Spaghetti alle vongole: Clams, lemon, white wine. Pane e grissini on the side is not optional.

Mafaldine al ragù bianco misto: beef and lamb white ragù, Pecorino. No tomato. On purpose.

We keep the important ones. A proper lunch, at a table, in under an hour: antipasto della casa, then the main del giorno. $25, Tuesday to Friday, 12–2pm.
