You know what really drives me? Seeing so much potential in hospitality spots every single day, but watching opportunities just slip through the cracks. It’s the little things, the touch points, that get overlooked. Like menus that confuse more than they sell, lighting that kills the vibe, staff who aren’t empowered to shine, and layouts that make guests work harder than they should.
It’s not about spending more money, it’s about noticing and caring about the details. Hospitality’s heart, right? And when those touch points are ignored, it doesn’t matter how good your food is, guests feel it.
I talk to so many owners who want that buzz, who want loyalty, but skip the basics. And honestly, that’s the stuff that keeps me up at night. Because the fix is usually right in front of us.
I see it. I feel it. And can’t help but call it out.

Early start. The whole crew in the room, sleeves up, hashing out the bones of Positano. This isn’t just another Italian spot, no. This is Western Sydney about to get a slice of the Amalfi spirit, done with depth, purpose, and detail. We went through every touchpoint, guest flow, mood, textures, sounds, right down to the moments people don’t realise they notice until it’s off. That’s where the magic is.
I’ve said this before, but food gets them in the door. Hospitality, the detail, that’s what lingers. That’s what brings them back. Positano isn’t about being flashy. It’s about being memorable. It’s the feeling of walking into somewhere and instantly thinking, yep, I could stay here a while.
And that’s exactly what we’re building, layer by layer, no shortcuts, no compromises.

Yes, the food matters. Of course it does. But hospitality is so much bigger than what lands on the plate.

The way the team makes you feel.
Even the little touch points people might not consciously notice… they all matter.
Because people don’t just go out to eat anymore — they want an EXPERIENCE.
They want to feel comfortable.
They want to take photos.
They want to sit somewhere beautiful.
They want to tell their friends about it.
And most importantly, they want to remember how your venue made them FEEL.
Good food is part of hospitality.
But the details? That’s what brings the whole experience together.
Sometimes it’s the smallest thing that leaves the biggest impression.
