Easter is all about the lamb. Ours is a full rack, sourced from the Lachlan Valley in NSW. Expertly slow-cooked and finished over our charcoal grill, this show-stopping centrepiece is served with charcoal artichokes, set on a velvety potato and mushroom purée and finished with a rich jus.
