1.2 tonnes of olive oil from a small family grove in Greece near the village where the Vardis family is from just landed at Georges.
The olives are picked in October, before they are fully ripe, which is what gives it the deep green colour, the peppery finish, and unusually high polyphenol levels. Early harvest means low yield, you get far less oil per tonne of fruit. The low yield is off-set by the health and taste benefits.
The olive oil we use at Georges is cold pressed, organic from an un-irrigated orchard.
Pour it generously on breads, salads and proteins. Come and taste the difference.

To get to the restaurant at The Promenade in Sydney via public transport, take any train or bus that goes to Wynyard Station. From there, it's a short walk down Erskine Street toward King Street Wharf. Alternatively, you can take the ferry to Darling Harbour and walk west along the waterfront until you reach The Promenade.
If you are driving, take the Western Distributor freeway into Sydney and exit onto Sussex Street. Follow this until you reach King Street Wharf where you can park in one of several nearby parking garages. From there, it's a short walk to The Promenade.
