At Paradox Coffee Roasters, coffee cupping is an essential part of how we evaluate, understand and maintain the quality of our coffee.

Yogesh our Head Roaster takes us through what coffee cupping is, why we do it and what our roasting team looks for when evaluating a coffee.

From comparing different samples and selecting coffees for our blends, to assessing roast quality and identifying defects, cupping allows us to understand the true characteristics of each coffee.

Every day, we roast samples from different origins. The following day, we cup those coffees to evaluate their quality, flavour and development, helping us make informed decisions throughout our roasting and quality control process.

Welcome to the Paradox family, Banksia Bakehouse.

We’re excited to welcome Banksia Bakehouse’s second location to the Paradox family, now open in Barangaroo.

After their first location on George Street, the Banksia team have opened their doors in Daramu House, bringing their baking, pastries, cakes, savoury offerings and Paradox coffee to Barangaroo.

From their open kitchen where you can watch the team at work, to the freshly made pastries and cakes they’re known for, there’s plenty to discover at their new location.

It’s great to see the Banksia team growing and to be part of this next chapter with them.

Introducing our September Espresso Single Origin: El Salvador La Providencia

This Yellow Caturra Anaerobic Natural from Finca La Providencia reflects generations of coffee knowledge and a drive to innovate.

Owners Fernando Alfaro and Jose Enrique Gutierrez come from long lines of coffee producers, combining traditional expertise with new approaches to coffee production.

This lot comes from the Guarumal plot, named for the Guarumo trees that provide natural shade across the farm. Cherries are handpicked at peak ripeness, then fermented in airtight bags for up to 72 hours before being slowly dried on raised beds under shade.

The result is a juicy, complex espresso with notes of plum, mandarin, sweet grapes and dark chocolate.

Introducing our September Filter Single Origin: Kenya Inoi Thaita

Grown on the slopes of Mt Kenya, this coffee comes from the Thaita Factory in Kirinyaga County, where around 800 smallholder farmers contribute cherries to the Inoi Cooperative Society mill.

Coffee is grown on small plots at around 1,750 MASL, with rich red soils, cool temperatures and ideal rainfall creating the perfect conditions for slow maturation and an expressive cup.

Cherries are handpicked at peak ripeness and carefully sorted before being traditionally fully washed.

The result is a sweet, layered filter coffee with notes of toffee, blackcurrant, bright orange and delicate hibiscus through the finish.

September’s single origins are now on rotation.

This month, we’ve got three very different coffees from Colombia, Kenya and El Salvador.

Our limited release filter is the Colombia Ombligon from Finca Las Flores, a rare variety with a multi-stage fermentation process and vibrant notes of cherry, guava, pomegranate and watermelon.

On filter, we have the Kenya Inoi Thaita, a washed coffee from Kirinyaga with sweet, layered notes of toffee, blackcurrant, orange and hibiscus.

For espresso, we’re pouring El Salvador La Providencia, an anaerobic natural with plenty of fruit and sweetness, bringing notes of plum, mandarin, grapes and dark chocolate.

Three coffees, three different origins and three very different cups to explore this September.

Meet Alex from The Junction Cafe, Griffith University, Gold Coast who is our Barista of the month for September !!

With over 13 years of experience as a barista, he knows a thing or two and has a passion and appreciation for the science behind coffee.

What’s your name and where do you work?
Hi, I'm Alex Browning and I am working at The Junction Cafe located at Griffith University.

What inspired you to become a barista?
I've been a Barista for 13 years and in that time the art has changed a lot. It has become so beautifully refined, especially here in Australia and for me it really offered a lot of learning to do both socially and the science behind the product.

How do you start your day before a shift?
I usually start at 5:30am so there isn't much time but I ride a bicycle everyday to work and that's a great way to start the day generally.

What’s your favourite part of working at the café?
My favourite part is the people really. There are so many memorable interactions, I've worked around the Gold Coast for a fair while and everyday I see customers out in the community outside of work either riding to the beach or getting groceries and, without my job I would never have the chance to meet so many different people, sometimes cafes build communities.

Do you have any tips for perfecting latte art?
I've mostly explored free-pour latte art so, I focus on angling your cup, height of your pour, milk temperature and using different milk jugs to achieve different techniques, have fun with it.

What’s your favourite blend or origin and why?
Anything out of Africa. The versatility of a nice Ethiopian from decent elevation is unmatched.

What’s a fun fact most people don’t know about you?
I used to sleep with coffee beans in my pillowcase. It was a few years ago and I loved exploring different origins that way.
