The refreshing acidity leaves a sharp impression, while the aftertaste fades away gently and cleanly. While it is a daiginjo sake, its notable features lie not only in its aroma but also in its exquisite taste and smoothness.

Junmai Daiginjo “Kakitsubata” from Yamaguchi prefecture
This is a Junmai Daiginjo sake polished to 40% of the original rice grain, using the Yamada Nishiki variety. It boasts a gentle aroma with no harshness, enveloped in the soft and elegant sweetness characteristic of Yamada Nishiki rice. The finish is clear and crisp, without any roughness, while the refreshing acidity reminiscent of white wine adds to its appeal. Like the elegant appearance of a swallowtail butterfly, it is a masterpiece crafted by a dedicated brewer exuding dignity and grace.
