Thankfully, her event was the next morning, so I offered to drop the cake off early.
But not everyone gets that lucky. What if her event had been that very evening-and the cake wasn't even started yet😥
In my head, I was so sure the cake was due Saturday. I had even scheduled it in my calendar for a Friday collection. And even when she texted saying, "'Il reach tonight (Friday) by 8pm to collect the cake," I somehow missed the urgency. I don't know how I overlooked the word "today" hidden in plain sight.
I honestly couldn't believe how absent-minded I was that day.

Part 2 of my last reel busting fondant cake storage myths!
This geode cake features a fondant stone texture with marbling, sugar roses and a geode adorned with rock sugar instead of isomalt crystals.
I’ve been there—melting isomalt, pouring it onto silicone mats, and breaking it into crystal shards. But then I discovered a simpler alternative.
Why I prefer rock sugar for geode cakes:
✨ More affordable and readily available than isomalt
✨ Tastes like actual sugar and is chewable
✨ No risk of biting into rock-hard isomalt pieces hidden in icing
That said, I still use isomalt for certain decorations like sail toppers where it truly shines.

Since I began my caking journey, I kept hearing the same advice:
“Never refrigerate fondant cakes—they’ll sweat, become tacky, or the colours will bleed.”
For years, I believed it.
As a result, I often compromised the stability of my fondant cakes, especially during hot and humid weather. Soft interiors led to shifting tiers, bulging sides, and stressful deliveries.
Then one day, I decided to test the theory myself.
After submitting a fondant cake for an online competition, I wrapped it well and stored it in the freezer for days. When I thawed it at room temperature, there was some condensation—but no colour bleeding, no tackiness, and no damage to the finish.
That experiment changed everything.
Since then, I’ve refrigerated fondant cakes before transport countless times to keep them stable and secure, especially in warm weather.
The lesson? Don’t accept every piece of industry advice as fact. Test, troubleshoot, and find what works for your standards and environment.

If you're traveling via public transport, the closest train station is Penrith Station. From there, you can take Bus 784 or Bus 794 and alight at Jordan Springs Boulevard near Greenwood Parkway. The bakery and cupcake shop is just a short walk from there.
