Our Corn Cheesecake is actually made with corn, shaped like corn, topped with caramel popcorn and served warm. Slightly confusing. Very delicious.

Meet Mariana Escalera Beverido, Head Chef at Baja Cantina Central.
Born in Veracruz, Mexico, Mariana grew up surrounded by fresh seafood, traditional Mexican cooking, and a family deeply rooted in hospitality, with both her grandparents and mum running restaurants. She started working in kitchens at just 16 before heading to culinary school, later building her career across catering, consulting, teaching, and restaurants both in Mexico and Australia.
Since moving to Sydney with her family, Mariana has worked at venues including Totti’s Bondi, Coogee Pavilion, Rico’s Tacos and Mountain Culture, before joining Baja Cantina Central as Head Chef.
For Mariana, creativity in the kitchen is everything, and that’s exactly what she loves most about Baja. Next time you’re in, don’t forget to stop by and say hi to the kitchen!
