You know fairy floss, but this is butter egg floss - a special sauce we serve with king prawns.
With repeated stirring in a super hot wok, the butter and egg liquid solidified into these floss which we use to coat the king prawn.
It is a unique dish you must try.

The cooking technique in this dish is known as Wat Tan.
It literally means egg gravy over hor fun, a type of flat rice noodle commonly used in Asian cuisines.
The dish is prepared by lightly searing the noodles before pouring a generous serving of stringy egg gravy on top.
