Mexican style ceviche of kingfish is a really great light but flavourful way to start a 3 course menu.
Everything is important to Passion ate the Chef, wvery ingredient must be balanced and not over ride the main entity, even the piece of crockery used must make sense like this handmade Japanese piece that reminds me of the ocean.
