When tomatoes are cheap, do yourself a favour and make a bulk batch of roasted tomatoes with onion, garlic, olive oil, salt and pepper. Keep it chunky or blitz to a smooth sauce. So good for pasta, add to meatballs, turn into soup or just smoosh onto bread. One of my fave summer batch cooks for the week ahead. Lately I’ve been learning about the importance of prebiotics for gut health, and I had no idea asparagus was on the list! One of my favourite ways to eat it is raw, thinly sliced in a salad, and this miso dressing makes it even more of a winner. Whisk miso with a little hot water, rice wine vinegar, and sesame oil, then toss in greens and sprinkle with sesame seeds. Yum and good for your gut! A good salad dressing is what brings a salad to life, ties it all together and makes you want to eat more vegetables everyday. But they don’t need to be complicated or intimidating.
Sometimes I like shaking dressings in a jar, but alot of the time of I make dressings in the bottom of the bowl.
You’ll find adaptable base recipes and a simple, fool proof formula for winning salad dressings in my new
Virtual Guide to Salad Making on , so you can quickly pull together something delicious with what you already have in the pantry and fridge.

This pilaf is from our cookbook Use it All. It’s nutty and spiced and makes the perfect side for grilled meats. It is particularly lovely with the saffron, as it lends its unique flavour and beautiful colour to the dish, but if you don’t have any a little tumeric will do.
