MEET A FILIPINO FOODIE
One of the most generous people we’ve ever met, we are so honoured to have Will Mahusay as an active and committed member of the Filipino Food Movement Australia Inc. Will is at the forefront of his family’s lechon business – Sydney Cebu Lechon, the oldest purveyor of lechon in Sydney celebrating 27 years in business. This month’s Mabuhay Nights is not possible without Will’s endless support for the community and his passion to uplift Filipino food into mainstream Australia. When Will speaks of Filipino food, his business and his advocacy efforts with the community here and back home, we feel his energy and this inspires us to do more for our culture and our food.
What is your most meaningful connection to Filipino food?
I was born in Cebu Philippines and I love Filipino food and those two things will always be part of my identity. Filipino food is as diverse as the people born there. For me it tells a story of my parents, grandparents, my great-grandparents. Filipino food has a way of leading you back to your roots. The experiences I was able to forge with both my Lola (grandmother) are my most cherished memories. Whenever I eat “humba” I am reminded of my Lola on my Dad’s side and each time I eat or see or smell Biko I’m reminded of my Lola on my Mum’s side.
Growing up, my Lola on my Dad’s side would take me shopping to the markets (palengke) and help her carry the produce/ingredients back to the house, and my favourite part of that trip was she always bought me my favourite Filipino snack - banana cue.
When did your Filipino food journey start?
The path to good Filipino food starts at home and and from there the journey that it can take you on is up to you, and for me I see more and more non Filipino people enjoying our cuisine and I also see the opportunity to help build up underprivileged communities back in our motherland through philanthropy projects. After working in the corporate environment for many years, in 2016 I took an active part in the family business, and it was the best decision made. The business has been growing and to be a part of the dynamic and multicultural culinary landscape in Sydney is an opportunity to promote more about Filipino cuisine to the wider population.
What would you say to those who have not tried Filipino food yet?
Filipino food is more than just the famous lechon or the tasty adobo - the flavours of Filipino Food is so diverse that by the time you’re done your palate will definitely broaden.
Sydney Cebu Lechon Native Filipino Eatery is hosting another Kamayan dinner on the 11th July with proceeds going to the Palawan Project helping the indigenous Parangue tribe of Palawan. For details, please visit their Facebook and Instagram pages.
