Cooking the perfect roast takes time and patience.π
Each cut of chicken cooks at a different rate, so when cooking a whole roast it can be difficult to keep the chicken tender and succulent.
The best method is by preheating the oven to 175oC and roasting it for 20 minutes per kilo, then an additional 15 minutes after that!

It's time to spice up your dinner with this rustic garlic chicken with asiago gravy!
Ingredients:
β’ 1 tablespoon oil
β’ 4 skin on chicken thighs
β’ Salt and pepper to taste
β’ 1 onion, diced
β’ 20 cloves garlic, peeled
β’ 2 teaspoons fresh thyme, chopped (or 1 teaspoon dry thyme)
β’ 2 tablespoons flour
β’ 1 cup chicken stock
β’ 1/2 cup asiago cheese (or parmesan), grated
β’ Salt and pepper to taste
Directions
Step 1:
Heat the oil in a large sauce pan over medium-high heat, add the chicken (seasoned with salt and pepper) and brown, abut 3-5 minutes per side, before setting aside.
Step 2:
Add the onion and garlic and saute until the onions are tender and the everything is lightly browned, about 3-5 minutes.
Step 3:
Sprinkle in the thyme and flour and cook for a minute.
Step 4:
Add the broth and deglaze the pan by scraping the brown bits off of the bottom of the pan with a spoon while the broth is sizzling when added.
Step 5:
Mix the asiago into the sauce and season with salt and pepper to taste.
Step 6:
Add the chicken, cover (with a lid or foil) and roast in a preheated 400F/200C oven for 15 minutes OR turn the heat down to medium-low and simmer on the stove top for 15 minutes.

This recipe for Lemon chicken skewers with tzatziki sauce is a tasty way to cook our chicken breast for dinner!
INGREDIENTS:
Greek Lemon Chicken Skewers
β’ 1 1/2kg chicken breast, cut into approximately 1 inch cubes
β’ 3 tablespoons fresh lemon juice
β’ 1 tablespoon red wine vinegar
β’ 1 tablespoon extra virgin olive oil
β’ 2 cloves of garlic, minced
β’ 2 teaspoons dried oregano
β’ 1/2 teaspoon dried parsley
β’ 1/2 teaspoon coriander
β’ 3/4 teaspoon kosher salt
β’ 1/8 teaspoon black pepper
Tzatziki Sauce
β’ 1 cup peeled and diced English cucumber, about 1/2 of a cucumber
β’ 1 1/2 cups plain non-fat Greek yogurt
β’ Juice of half a lemon
β’ 1 heaping tablespoon chopped fresh dill
β’ 1/2-1 teaspoon grated garlic
β’ 1/2 teaspoon kosher salt
β’ Black pepper to taste
INSTRUCTIONS
Greek Lemon Chicken Skewers
1. In a large bowl whisk together the remaining ingredients then add in the cubed chicken and toss to coat.
2. Cover and refrigerate the chicken for 45 minutes to 3 hours.
3. Heat the grill to medium high heat.
4. Thread the chicken onto metal or wooden skewers, be sure to soak wooden skewers for 30 minutes.
5. Oil the grates of the grill or grill pan and place the skewers on them.
6. Grill the chicken for 3-4 minutes then flip it over and grill for another 3-4 minutes or until the chicken is cooked through.
Tzatziki Sauce
1. Peel and dice the cucumber.
2. In a medium sized bowl combine the remaining ingredients and whisk together.
3. Fold in the cucumber and refrigerate until ready to serve.

: Cross Contamination is a serious issue that can occur anywhere.
This is when raw poultry - or just its juices mix with cooked food, or food that can be eaten raw ie. vegetables.
There are two very easy ways to prevent this from happening:
β’ Disinfecting all surfaces with hot water and soap after working with raw chicken.
β’ Sealing raw chicken tightly & placing it on the lowest shelf towards the back of the fridge.

This recipe for spicy grilled chicken wings is sure to be a real crowd pleaser! π
Here is what you'll need:
Chicken
β’ 3-4 kgs fresh chicken wings
β’ 2 tps Johnny's Seasoning Salt
β’ 1 1/2 tps paprika
β’ 1 1/2 tps onion powder
β’ 1 1/2 tps garlic salt
Sauce:
β’ 1/2 cup House of Tsang General Tsao Sauce
β’ 1/2 cup soy sauce
β’ 2 teaspoons sriracha
β’ 1/4 teaspoon fresh ginger
Instructions:
Step 1:
Separate wing sections and discard wing tip. Combine dry rub ingredients, and sprinkle evenly over wings.
Step 2:
Preheat grill to medium, and place wings over heat turning frequently. Cook for 20-25 minutes, or until they reach a minimum internal temperature of 165 degrees, and the skin is crispy.
Step 3:
Remove from grill, and combine sauce ingredients. Toss wings in sauce, and serve immediately.
You gotta try it, they're clucking good!
