the dishes stem from the imagination of hatted chef jeremy bentley, who transforms simple dishes into culinary feats.

crowd favourites include the melt-in-your-mouth salt fish brandade with taramasalata, as well as the lightly cured ocean trout with puffed buckwheat and creamy mayo.
